A 800 watt total amp is pretty small for a 600 watt 12" sub. Is it 600 watts RMS or PMPO for the sub? Cos if it's RMS, then you need a bigger amp.
If the protector light comes on and the volume cuts off, this means that there is an overloading somewhere along the circuitry. Is your sub a single or double voice coil? If it's double, is it running at 4 ohms or 2 ohms? Some amps do not accept 2-ohm loads. So when u run a 2-ohm sub on a 4-ohm amp, chances are it might shut off as a safety measure.

You probably have the sub wired wrong. Browse the internet to figure out how to properly wire your sub for 4 ohm. Also, make sure that you have a very good ground on your amp. A poorly grounded amp will give you all sorts of issues.
